Whisk together the besan, turmeric powder, red chilli powder, garam masala powder, baking soda and salt.
Add water to the batter, whisking until it is smooth and thick.
Add the paneer cubes to the batter and toss to coat evenly.
Heat oil in a deep fryer or pot to 350 degrees F (175 degrees C).
Carefully drop the paneer cubes into the hot oil and fry until golden brown and crispy, about 3-4 minutes.
Remove the paneer pakoras from the oil and drain on paper towels.
Serve immediately with chutney or your favourite dipping sauce.
