4large potatoesrusset or starchy potatoes are the best ones

Instructions
The potatoes must be washed, peeled, and then cut into the same round shape so they are not too thin to cook or too thick to cook.
To prevent excessive starch that is lost, cut potatoes are moistened in water at least 30 minutes before peeling to drain all the starch and make the potatoes crispy.
Peel the potatoes, rinse and dry well using a kitchen towel.
Place the potatoes in medium-hot oil and cook it approximately 45 minutes or so till they are cooked but not browned, then remove them and leave them to cool down fully.
It is then rinsed once more in hot oil until the potatoes are golden-brown and crispy, then removed and dried using paper towels.
Salt and sprinkle the hot fries with any other favorite seasoning that one desires.
