Puran Poli is an Indian sweetened flat bread of soft wheat dough that is filled with a sweet lentil jam of chana dal and jaggery. This delicacy is used in Maharashtra and other regions of India and is taken in occasions of special events and family celebrations.

Ingredients
For the Puran Filling
1cupchana dalSplit Bengal gram
1/2cupjaggerygrated or chopped
½tspcardamom powder
a pinch of Nutmeg powderOptional
For the Dough
1½cupswheat flour
A pinch of salt
1tbspoil or ghee

Instructions
Wash chana dal and pressure cook in a lot of water till soft yet not mushy. Empty the water and save it in case of katachi amti. The dal must be properly cooked but not moist.
Add cooked dal and grated jaggery in a pan, bake at a low temperature and stir until the jaggery is molten and the mixture becomes thick. Add cardamom and nutmeg powder, and bake until the mixture begins to dry up, and separates the sides of the pan. Allow it to cool and mash or grind it to a smooth paste.
Add wheat flour, salt and oil or ghee in a bowl and gradually add water to get a soft and smooth dough and at last allow the dough at least 30 minutes to cover and rest.
Divide the dough and puran into half. Take a lump of dough, roll it out, then place inside it a puran ball and then roll the edges completely and rest of the ball, and roll it out also in soft pieces.
At this stage roll the stuffed dough into a thin circle by patting it with light pressure and cooking it on a hot tawa till some golden spots appear on both side and finally apply ghee and cook until soft and fully cooked.
Notes
The puran should be thick and well-cooked to avoid tearing
Dough must be soft and rested for easy rolling
Cook on medium heat for even cooking
