Instructions
You will have to prepare a big mixing bowl and put boiled potatoes and boiled mixed vegetables. This will force you to mash them up in order to achieve a smooth mixture with the help of a fork or a masher. Then add spices, salt, green chili, coriander, chopped onion, ginger garlic paste to them.It follows well with adding corn flour or breadcrumbs. When it is fried, the mixture will maintain its shape. Breadcrumbs should be added in case the mixture is too soft.
Split the mixture into equal pieces and mould the pieces into patties either round or oval in shape. Hold them a little thick so that they are juicy. Refrigerate them if possible, for a period of at least 10 to 15 minutes so that they are solidified to fry easily.
Heat oil in a pan over medium heat, place the patties gently and fry until it turns golden brown from both sides. One flip, one flip, or you break. You may shallow fry, pan fry or air fry whichever you want.Afterward, dry the patties on a paper towel in order to take off remaining oil.
Cut the buns horizontally on the burger. Toast the buns in a pan with a little butter till light brown and crisp. This ensures that it boosts taste and avoids the buns getting wet.
Apply mayonnaise on the bottom bun. Lettuce leaves, tomato slice and onion rings. Place the hot veg patty on top. Add cheese slices if using. Sprinkle ketchup or green chutney or mustard sauce. Cover with the top bun.
Notes
Incorporate grated cheese or paneer to create a more luxurious patty
In case of vegan burgers, you may omit cheese and use vegan butter and mayonnaise
Using whole wheat buns is a healthier alternative
