Singhare Atta Halwa Recipe

water chestnut flour halwa is a delicious vrat-friendly dessert made with singhare ka atta, ghee, milk or water, and sugar or jaggery. It is quick, rich, and perfect for Navratri, Ekadashi, and other fasting days.

Ingredients

Singhare Atta Halwa Recipe

  • 1-2 cup Singhare Ka Atta Water chestnut flour
  • 2-3 cup Ghee For roasting
  • 3 cup Water or Milk Hot
  • 3/4-1 cup Sugar or Jaggery Adjust to taste
  • 1/2 tsp Cardamom Powder For flavor
  • 2 tbsp Almonds Chopped
  • 2 tbsp Cashews Chopped
  • 1 tbsp Raisins Optional
  • 4-5 strands Saffron Optional

Instructions

  • Heat ghee in a heavy-bottomed pan over low-medium heat. Add singhare ka atta and roast for 6–8 minutes, stirring continuously until lightly golden and fragrant.
  • Meanwhile, heat water or milk in a separate pan until hot.
  • Slowly pour the hot liquid into the roasted flour while whisking continuously to prevent lumps.
  • Keep stirring until the mixture becomes smooth and starts to thicken.
  • Add cardamom powder and half of the chopped almonds, cashews, and raisins. Cook for 3–4 minutes, stirring until glossy and the halwa starts leaving the sides of the pan.
  • Turn off the heat, garnish with the remaining nuts and raisins, and serve warm.

Notes

What's the Right Ratio of Flour, Liquid, and Sweetener?

A reliable starting ratio is 1 cup singhare atta to 3 cups liquid and 3/4 to 1 cup sweetener, which gives a soft, spoonable halwa rather than a stiff one. This flour thickens fast and keeps firming up even after it's off the heat, so it's easy to overshoot and end up with something closer to a brick than a halwa if you go too light on the liquid.
