  • Pointed Gourd, Parwal, or Patol can be taken in 500 grams. Make sure you choose medium-large ones with intact ends. 
  • You need 2 large potatoes. Peel them and cut them into medium pieces. 
  • You need one cup of water. 

Now for the masala(stuffing) used for the bharwa parwal recipe-

  • A medium onion chopped.
  • 10-12 cloves of garlic.
  • 1 small piece of Ginger. 
  • 2-3 green or red Chillies, depending on the taste & how much spice you can handle.
  • 150 grams of paneer, also known as cottage Cheese. Make sure it has been crumbled.
  • Substitute: If paneer is unavailable, you can boil potatoes and use it as a substitute.
  • 3 tbsp of cooking oil. For an authentic Indian taste, you can use mustard oil.
  • 1 tablespoon of Kashmiri Red Chilli Powder. 
  • 1/2 a teaspoon of Turmeric Powder.
  • 1 tbsp of Coriander Powder.
  • 1/2 half a teaspoon of Garam Masala.
  • A salt to taste.
  • Also need 2 tsp of tomato ketchup.
  • You need one tsp of Chilli Sauce.
  • 1/2 a spoonful of lemon juice.
  • You need freshly chopped Coriander Leaves for garnishing.

How to Make a Delicious & Crunchy Bharwa Parwal Recipe?

You must follow the steps below to make a delicious recipe of stuffed parwal, as follows:

  • Take half a kilogram of pointed, colored petals, and they should be a little larger. Do not take the small ones; the ends should be intact. Take two large-sized potatoes,  peel them, and cut them into medium pieces.
  • Put all these vegetables in a pressure cooker, add one cup of water, and ensure the potatoes are below the bottle.
  • Now, pressure cook it for one whistle at high flame, and wait until the pressure is released and these potatoes are 80 percent done.
  • Strain them and put them aside. Wait till they cool down.
  • Now, cut one pointed garden petal from top to bottom; do not just cut it through; first, separate the layer. Then, scoop out all the seeds and pulp from inside it.
  • Now, heat the pan on a medium-high flame for the masala and add around 3 tbsp of cooking oil at once.
  • Add the blended onion-ginger paste and stir it for 2-3 minutes. Then add one tablespoon of Kashmiri red chili powder, one teaspoon of turmeric powder, one tablespoon of coriander powder, and salt as per taste, and blend these masalas nicely for 3 to 4 minutes. 
  • Now add the mashed potatoes. It’s essential not to mash them thoroughly. Cook them on medium to high flame for four to five minutes, and then add crumbled paneer or cottage cheese, around 150 grams.
  • Roast it in an open flame for seven to eight minutes on medium heat until the stuffing is ready; it has actually dried up. Add the sauces and half a teaspoon of garam masala and mix it nicely.
  • Once it’s nicely done, switch off the flame and add lemon. Let the stuffing cool then add some finely chopped coriander leaves.
  • Now add a small amount of stuffing to all the Parwals. You need to stuff this vegetable nicely, so first add this ball. To make sufficient space, press the stuffing inside to see how much space is left. You can add more stuffing.
  • To shallow fry them, use a cast iron pan and add four tablespoons of mustard oil on a high flame, initially medium-high.
  • Add Parwals. They will be fried for one to two minutes. Keep flipping to see if the potatoes have become lovely and dark.
  • When you see that the size has shrunk, you realize the Parwals are ready.
